Method of preparation
Put the aubergines in a colander and sprinkle them with salt. Mix and leave to rest for 1 hour. Wash in running water and set aside. In a pan, heat the oil and fry the onion and garlic for 4 minutes. Add the tomato and eggplant and stir-fry for 5 minutes. Season with salt, pepper and green perfume and leave to cool. Pass the braised meat in the food processor and transfer it to a bowl. Add the oatmeal and flour and roll into balls. If necessary, add more flour. Reserve.
For the sauce, in a skillet, heat the oil over medium heat, add the onion and garlic and saute for 3 minutes.
