Despite being present in the homes of most Brazilians, the Ketchup it’s a condiment that many don’t even imagine what ingredients it has other than, of course, tomatoes.

According to Brazilian Food Industry Association (ABIA)this sauce must be composed of spices, edible oils, eggs, salt, sugar, lemon, vinegar and other approved food substances can be added, according to individual taste.
Furthermore, it can have a more liquid or creamy consistency and, in the case of products sold on the market, it must bear the name of the spice, followed by the form of presentation, on the label.
So what is ketchup made of?
Second Tomato BR, the Brazilian Association of Industrial Tomato Processors and Users, there is an average percentage of how much each element is used in the ketchup recipe. For every 100 g of tomato pulp use:
- from 40 to 58 g of sugar;
- 5 g of salt;
- from 30 to 40 ml of vinegar;
- from 0.6 to 0.8 g of seasonings (spices);
- Water (necessary for a minimum of 35° Brix).
How to choose ketchup?
With so many options available on the market, the best way to choose a ketchup is to consider your preferences.
In this way you can check the information on the label on the ingredients used in that recipe and, therefore, decide based on:
- if you prefer the sweeter or stronger taste of vinegar and seasonings;
- if you prefer traditional or spicier versions;
- the composition of the ketchups, looking for those with the least preservatives;
- calories, in case this is an important point for you, since different brands have zero, light or gluten-free and lactose-free options.
