stuffed spinach pancake
ingredients
Filling
- 2 cups of tea leaves spinach
- 1 sliced avocado
- Salt and ground black pepper to taste

- 1 1/2 cups spinach leaves
- 3 cups of soy milk
- 3 tablespoons of ground flax seeds in 9 tablespoons of water
- 2 tablespoons of olive oil
- 1 pinch of salt
- 2 cups of wholemeal flour
Method of preparation

In a blender, blend the spinach leaves, the soy milk, the mixture of water and flaxseed, the wholemeal flour, the salt and a spoonful of olive oil until you obtain a homogeneous mass.
Assembly
Grease a pan with a tablespoon of olive oil and add a ladle’s measure of dough. Bring to low heat and wait for the pancake to firm up and then turn it over. Once firmed, turn off the heat. Stuff the pancake with part of the spinach leaves and the chopped avocado. Season with salt and pepper and fold the pancake in half. Repeat procedure with remaining dough and filling. Serve immediately.
sweet carrot pancake
ingredients
- 1 1/2 cup soy milk
- 1 chopped carrot
- 3/4 of a teacup of sugar
- 2 teaspoons of baking powder
- 3 tablespoons of oil
- 1 tablespoon of apple cider vinegar
- 2 teacups of wheat flour
- Oil for greasing
Method of preparation
In a blender, beat the soy milk, oil and carrot until a homogeneous mixture is obtained. In a bowl mix the wheat flour, sugar and baking powder. In the same bowl, add the blender mixture and the vinegar. Mix well until a uniform mass is obtained.
Grease a frying pan with a little oil and heat it over medium heat. Spoon batter onto the hot skillet and spread it out to form pancake discs. Let one side brown and then turn to brown the other side. Repeat the process with the rest of the dough and let it cool before serving.
pancake with vegetables
ingredients
- 1 teacup of oatmeal
- 1 teacup of soy milk
- 1 tablespoon of ground flax seeds in 3 tablespoons of water
- 1 teaspoon of baking powder
- 1 cup of sliced cabbage
- 1 sliced leek
- 2 grated carrots
- 2 tablespoons of water
- Olive oil, salt and ground black pepper to taste
Method of preparation
In a skillet, heat the oil over medium heat and sauté the leeks, carrots and cabbage for 3 minutes. Add the water and sauté for another 3 minutes. season the vegetables with salt and black pepper, turn off the heat and set aside. In a blender, beat the oatmeal, soy milk, flaxseed mixture with the water, yeast and a pinch of salt. Heat a non-stick pan greased with olive oil and pour the dough into it. Once the pancake is done, flip it over to cook the other side. Then stuff with vegetables, roll up and serve.
