Assembly

Grease a pan with a tablespoon of olive oil and add a ladle’s measure of dough. Bring to low heat and wait for the pancake to firm up and then turn it over. Once firmed, turn off the heat. Stuff the pancake with part of the spinach leaves and the chopped avocado. Season with salt and pepper and fold the pancake in half. Repeat procedure with remaining dough and filling.
