Lactose-free mashed potatoes
Time: 40 minutes Performance: 6 portions Difficulty: easy
Ingredients:
- 5 large potatoes
- 2 tablespoons of olive oil
- 1/2 cup vegetable broth (or hot water)
- Salt, black pepper and grated nutmeg to taste
Method of preparation:
- Cook the potatoes in boiling salted water over medium heat for 20 minutes or until tender.
- Drain and carefully remove the skin, holding the potato with a kitchen towel
- While still hot, pass through a juicer and set aside.
- Meanwhile put the oil in a pan.
- Add the potato and gradually pour in the vegetable broth or hot water, stirring constantly.
- Add the salt, nutmeg and pepper and heat for 2 minutes, stirring constantly.
- Remove from the heat, transfer to a platter and then serve as desired.
