Gluten-free and lactose-free carrot cake

ingredients

Pasta

  • 3 medium carrots
  • 3 eggs
  • 1/2 cup of vegetable oil
  • 1 teacup of demerara sugar
  • 1 teacup of rice flour
  • 1/2 cup sweet tea sprinkled
  • 1/2 cup cornstarch tea
  • 1 tablespoon of baking powder

To the roof

  • 1 cup of powdered sugar
  • 2 tablespoons cocoa powder
  • 2 tablespoons of almond milk

Method of preparation

Grease a round shape with vegetable oil and sprinkle with rice flour or use baking paper. Peel and cut the carrots into small pieces. Then beat them in a blender with eggs and vegetable oil until smooth.

In a large bowl, mix the demerara sugar with the rice flour, sweet tapioca and cornstarch. Add the carrot mixture to the dry ingredients and mix until smooth. add yeast powder to the dough and mix. Pour the batter into the buttered tin and bake in a preheated oven at 180ÂșC for 40 minutes, or until a toothpick inserted in the center of the cake comes out clean.

While the cake is baking, prepare the glaze. In a bowl, sift the icing sugar and cocoa powder. Add the almond milk (or other vegetable milk) and mix well until you get a creamy consistency. Remove the cake from the oven and let it cool for a few minutes before unmolding it. Spread the icing on the cooled cake. Serve and enjoy!

  • 3 eggs
  • 2 small carrots chopped
  • 1/2 cup of oil
  • 1 teacup of sugar
  • 1 and 1/2 cups of wheat flour
  • 1 tablespoon of baking powder

Method of preparation

To the mixer, add the eggs, carrots, oil and sugar. Beat until obtaining a homogeneous mixture in which the carrot is completely broken up and incorporated into the mixture. Transfer this mixture to a bowl and gradually add the wheat flour and baking powder. Divide the dough into two parts and add the chocolate powder to one of them.

Then butter and flour a pan with a central hole of 22 cm in diameter and 9 cm in height, pouring slowly the two masses interleaved. If you prefer, make flowing movements with a toothpick to create a marbled effect. Place in a preheated oven at 200ÂșC and bake for about 40 minutes, or until a toothpick inserted in the center comes out clean. Wait a while before unmolding the cake. Serve and enjoy. Enjoy!

Method of preparation

Add the wheat flour, baking powder and chocolate powder. Mix until a homogeneous mass is obtained. Place the cup in the microwave and cook over high heat for about 3 minutes or until the cake is cooked through. The time may vary depending on the power of your device. Carefully remove the mug from the microwave as it will be hot.

Allow the cake to cool for a few minutes first add the syrup.

Chocolate syrup

In a bowl mix the chocolate powder and sugar. Add the water and mix well. Microwave for about 30 seconds or until mixture is heated through. Remove from the microwave and add the butter. Mix until you get a smooth and glossy syrup.
