Cold Cucumber Soup – Photo: Shutterstock Time: 20min (+30min fridge) Performance: 4 portions Difficulty: easy

Ingredients:

  • 3 large cucumbers, peeled and cut into small pieces
  • 2 cups of natural yogurt (400 g)
  • 2 cups water (use empty yogurt cup to measure)
  • 1 minced garlic clove
  • 150 g of chopped shelled peanuts
  • 2 tablespoons of chopped mint
  • Salt and black pepper to taste
  • 1 drizzle of olive oil

Method of preparation:

  1. In a bowl put the cucumber, yogurt and water.
  2. Add the garlic, peanuts, mint, mix everything together and season with salt and pepper.
  3. Leave in the fridge for at least 30 minutes before serving.
  4. Serve with a drizzle of olive oil.

Cold tuna soup with tomato

Ingredients:

  • 4 ripe tomatoes cut into 4 parts
  • 1/2 diced red pepper
  • 1 small onion chopped
  • 1 large celery stalk, roughly chopped
  • 1/2 small chilli, deseeded and minced
  • 2 tablespoons of olive oil
  • salt to taste
  • 1 tomato, skinless and seedless, cut into 8 pieces
  • 1 can of light tuna
  • 100 g grated parmesan

Method of preparation:

  1. In the blender jug, combine the cherry tomatoes cut into 4 parts, the pepper, the onion, the celery and the pepper.
  2. Beat well until you get a smooth cream.
  3. Pass the preparation through a sieve.
  4. Add the oil and season with salt. Mix well.
  5. Add the tomato and drained tuna.
  6. Sprinkle with Parmesan and serve immediately.

cold beetroot soup

Ingredients:

  • 1 liter of water
  • 3 cubes of vegetable broth
  • Salt, black pepper and chopped mint to taste
  • Hard-boiled quail eggs for garnish

Method of preparation:

  1. Cook the beetroot in water, in the pressure cooker, for 40 minutes, over low heat, after starting the pressure.
  2. Remove from pan and let cool to remove the shell.
  3. Chop the beetroot and blend it in a mixer with the water and vegetable broth.
  4. Return to the pan and season with salt and pepper.
  5. Place over medium heat and cook for 5 minutes.
  6. Leave to cool and refrigerate for 2 hours.
  7. Arrange in bowls, sprinkle with mint, garnish with 1 quail egg cut in half and serve.
