Pumpkin cream
ingredients
- 1 tablespoon of olive oil
- 1/2 onion, peeled and chopped
- 1 clove of garlic, peeled and crushed
- 1/2 pumpkin peeled and chopped
- 4 cups of boiling water
- 1/2 teaspoon nutmeg
- 1/2 teaspoon grated ginger
- Ground black pepper to taste
Method of preparation
In a frying pan, put the olive oil and heat over medium heat. Add the onion and garlic and saute. Add the squash and water and cook for 30 minutes. Season with black pepper, nutmeg and ginger and sauté for another 10 minutes. Turn off the heat, wait for it to cool down and transfer the mixture to a blender. Beat until smooth and coat the cream with cream. Bring to medium heat to warm and then serve.
Tip: serve sprinkled with chopped chives.
Vegetable cream
ingredients
- two potatoes peeled and cut into cubes
- 2 mandioquinhas, peeled and cut into cubes
- 6 pods
- 1 tomato, peeled and deseeded, chopped
- 1 carrot peeled and diced
- 1 liter of chicken broth
- Salt and chopped chives to taste
Method of preparation
In a pressure cooker, put the vegetables, beans and salt and cover with the chicken stock. Cover the pan and cook over medium heat for 6 minutes, after pressing. Turn off the heat, wait for the pressure to release, open the pan and wait for it to cool. Then, transfer the mixture to a blender and blend until smooth. Arrange the cream over the pan again and bring to medium heat to warm through. Turn off the heat, sprinkle with chives and serve immediately.
potatoes cream
ingredients
- 3 peeled and grated potatoes
- 1/2 bunch of chopped basil
- 1/2 bunch chopped mint
- 1/2 bunch of chopped parsley
- 1/2 bunch chopped chives
- 2 tablespoons of olive oil
- 1 peeled and chopped onion
- 2 cloves of garlic, peeled and crushed
- 1 liter of broth hen
- Salt and ground black pepper to taste
Method of preparation
In a frying pan, put the olive oil and heat over medium heat. Add the onion and garlic and saute. Add the potatoes and sauté, stirring occasionally, for 5 minutes. Add the chicken broth, basil, mint, parsley, chives, salt and black pepper. Reduce heat and cook until potatoes are soft. Turn off the heat, let it cool and transfer the mixture to a blender. Beat until smooth and coat the cream with cream. Bring to medium heat to warm and then serve.
Carrot cream with beetroot
ingredients
- 1 peeled and grated onion
- 1 clove of garlic, peeled and minced
- 1 tablespoon of olive oil
- 2 peeled and grated carrots
- 1/2 zucchini peeled and chopped
- 1 beet peeled and grated
- 1 bunch of chopped watercress
- Salt and chopped chives to taste

Beat until smooth and coat the cream with cream. Bring to medium heat to warm through. Turn off the heat, sprinkle with chives and serve immediately.
