Madeira sauce steak

Ingredients:
- 1 kg of lizard pieces
- 3 tablespoons of olive oil
- 2 tablespoons of sugar
- 1 onion
- 1 tomato
- 2 tablespoons of chopped parsley
- 4 tablespoons of vinegar
- Salt, oregano and pepper to taste
- 2 beef bouillon cubes
- 1/2 liter of water
- 1 bay leaf
- 3 tablespoons of wheat flour
- 1 cup of water (tea)
- 1/2 cup brandy (tea)
Method of preparation:
- Put the oil and sugar in a pressure cooker and let it melt, stirring constantly, until it forms a caramel.
- Add the meat and fry turning occasionally until browned
- Meanwhile, in the blender, blend the onion, tomato, parsley, vinegar, salt, oregano, pepper, meat broth and water
- Pour over the meat, add the bay leaf and cover the pan, allowing it to cook for 40 minutes after pressing down.
- Remove the meat from the pan, cut into slices and then set aside, keeping warm.
- Dissolve the flour in the water and add it to the sauce that has formed in the pan, stirring constantly until it thickens.
- Add the brandy and cook for 5 minutes.
- Remove from the heat and then serve over the meat.
