Kafta: minced meat skewers served with a delicious mint sauce, a perfect and healthy combination

INGREDIENTS: ACCESS THE SHOPPING LIST HERE

Kaftan ingredients:

  • 300 g of minced meat (duckling or other of your choice)
  • ½ cup (tea) of hulled sunflower seed meal (or coarsely chopped sunflower seed, or replace with oatmeal
  • chopped coriander
  • ground cinnamon (a pinch)
  • 1 lemon (the zest)
  • ½ spoon (coffee) of cumin
  • Syrian pepper
  • 1 onion(s) chopped
  • Olive oil for brushing and grilling
  • salt and pepper
  • 6 BBQ skewers

Peppermint Salsa Ingredients:

  • 1 cup mint (leaves)
  • 3 tablespoons of extra virgin olive oil
  • 1 lemon (juice)
  • 1 clove of garlic
  • pink salt or sea salt
  • Pepper

To decorate:

  • mini headphones

PRE-PREPARATION:

  1. Gather all the ingredients and utensils for the recipe.
  2. Wash the coriander and parsley well, dry them, chop them and leave them on absorbent paper. Disinfect the sprouts (optional for finishing).
  3. Place the skewers on a baking sheet and cover with water. Let them soak while you prepare the meat so they don’t burn while grilling.
  4. Soak the mint in the sodium hypochlorite solution.

PREPARATION:

Coffee:

  1. In a bowl, combine the ground duckling, nuggets or oatmeal, coriander, onion, cumin, cinnamon, lemon zest, salt, and pepper and mix well.
  2. Remove the skewers from the water.
  3. With wet hands, shape the portions of meat around the skewers – press down gently so the kaftas adhere to the toothpick.
  4. Reserve.

Coffee:

  1. Heat a nonstick skillet over medium heat.
  2. Brush the kaftas with olive oil and arrange them in the heated pan next to each other.
  3. Sauté for about 3 minutes.
  4. Turn and saute for another 2 minutes.
  5. Remove from the pan and reserve them covered to rest before serving.

Mint Sauce:

  1. In the blender or in a bowl to use a mixer, beat the mint with the olive oil, lemon juice, peeled garlic, salt and pepper until smooth.
  2. Reserve.

FINISHING AND ASSEMBLY:

  1. Place the kafta(s). on a serving plate or if you prefer arrange on one side of the dishes.
  2. Put your accompaniment next to it, it can be a farofa or another of your choice.
  3. Pour some mint sauce on the kaftas.
  4. Serve the rest of the sauce on the side.
