Rice with broccoli and bacon

Preparation time: 30 minutes

Performance: 6 portions

Difficulty level: easy

Ingredients:

  • 200 g of diced bacon
  • 1 and 1/2 cups chopped broccoli
  • Salt and black pepper to taste
  • 4 cups cooked white rice (tea)
  • 1/2 cup mozzarella (diced)
  • 1 cup shredded mozzarella for sprinkling

Method of preparation:

  1. Heat a skillet over medium heat and fry the bacon in its own fat, stirring until browned.
  2. Then drain on a paper towel.
  3. Saute the broccoli in the bacon fat for 5 minutes or until softened, over medium heat.
  4. Season with salt and pepper.
  5. Remove from heat and mix with the rice, diced mozzarella and half of the pancetta.
  6. Pour into a medium refractory and sprinkle with the grated mozzarella.
  7. Bake in a preheated oven for 15 minutes or until golden brown.
  8. Sprinkle with the remaining bacon and serve the rice with broccoli and bacon.
