Rice with broccoli and bacon
Preparation time: 30 minutes
Performance: 6 portions
Difficulty level: easy
Ingredients:
- 200 g of diced bacon
- 1 and 1/2 cups chopped broccoli
- Salt and black pepper to taste
- 4 cups cooked white rice (tea)
- 1/2 cup mozzarella (diced)
- 1 cup shredded mozzarella for sprinkling
Method of preparation:
- Heat a skillet over medium heat and fry the bacon in its own fat, stirring until browned.
- Then drain on a paper towel.
- Saute the broccoli in the bacon fat for 5 minutes or until softened, over medium heat.
- Season with salt and pepper.
- Remove from heat and mix with the rice, diced mozzarella and half of the pancetta.
- Pour into a medium refractory and sprinkle with the grated mozzarella.
- Bake in a preheated oven for 15 minutes or until golden brown.
- Sprinkle with the remaining bacon and serve the rice with broccoli and bacon.
