Ingredients:
- 2 tablespoons of butter
- 3 tablespoons of olive oil
- 1 chopped onion
- 2 crushed garlic cloves
- 2 cups white fish (diced)
- 2 cups large shrimp (cleaned)
- 2 cups calamari rings (tea)
- 1 cup shellfish (with shells)
- 1 cup clams (with shells)
- salt to taste
- 1 cup carrots (diced)
- 1 cup fresh peas (thawed)
- 1 chopped red pepper
- 2 cups white rice (washed and drained)
- 1 teaspoon turmeric powder
- 2 cubes of fish broth
- 4 cups boiling water (tea)
- Chopped parsley for garnish
Method of preparation:
- In a pan, melt the butter with the oil over medium heat and sauté the onion and garlic.
- Add the fish, shrimp, calamari, clams and clams until the shrimp are pink and the shells open.
- Remove from the heat and discard any shells that do not open.
- Season with salt, remove all ingredients with a slotted spoon and set aside
- Meanwhile, in the same pan, add the carrots, peas, peppers, rice, saffron, salt and mix
- Pour in the fish broth and water
- Wait for it to boil, lower the heat and cook, covered, for 15 minutes.
- Spread the reserved ingredients over the rice, stir lightly, and cook for another 10 minutes.
