Mustard medallion recipe with risotto

Ingredients:
- 5 filet mignon medallions
- 3 tablespoons of mustard
- Salt and black pepper to taste
- 200 g of sliced bacon
- 2 tablespoons of butter
- 2 tablespoons of oil
risotto
- 3 tablespoons of butter
- 2 cups rice (arborio)
- 1/2 glass of white wine (tea)
- 6 cups of warm water (tea)
- 2 cubes of vegetable broth
- 3 cups (tea) cooked broccoli in bunches
- 1 cup Parmesan (grated)
Method of preparation:
- For the risotto, heat a pan with the butter and sauté the rice for 3 minutes.
- Add the wine and let it evaporate.
- Add the water with the melted broth, ladle by ladle, stirring constantly until the rice is well blended al dente.
- Then add the broccoli and Parmesan, mix and turn off the heat.
- Season the filet mignon medallions with the mustard, salt and pepper.
- Wrap the bacon slices into medallions.
