Creamy cauliflower soup recipe

Ingredients:
- ¼ cup (54 g) of olive oil
- 1 medium white onion (110 g), diced
- 3 cloves of garlic (9 g), peeled and minced
- 1 large carrot (72 g), cut into 0.5 cm slices
- 2 stalks of celery (80 g), cut into 0.5 cm slices
- 600 g cauliflower, cut into florets
- 4-5 cups of broth of your choice
- 1 teaspoon (6 g) of salt
- 1 teaspoon(s) of pepper
- ½ teaspoon lemon zest
- ⅛ teaspoon of nutmeg
- ½ cup (120 ml) of cream
- ¼ cup (15 g) fresh parsley, compacted and chopped
Method of preparation:
- Heat the cast iron skillet over medium-high heat and pour the oil into the hot skillet.
- Add the onions, garlic, carrots and celery and, stirring constantly, sauté until the onions are translucent, about 4 minutes.
- Add the cauliflower and stock to the pot.
- Mix all the ingredients, reduce the heat to medium and cover the pan.
- Simmer for 15-20 minutes, or until cauliflower is tender by pricking it with a fork.
- Turn off the heat and add the cream, salt, pepper, nutmeg and lemon zest.
- Place the pan guard on the hand blender arm and fit it to the motor body.
- Then turn on the device and place your arm entirely inside the soup.
- With attachment slightly angled into soup, press variable speed button for 2 seconds.
- Place the accessory in another position in the pan and, with the accessory at a slight angle, press the button for another 2 seconds.
- Continue to process the soup portions in 2-second intervals until the soup is creamy and there are still a few pieces of cauliflower left over for texture. Turn off the mixer.
- Add the chopped parsley and serve your creamy cauliflower soup hot.
Tip:
This soup can be made into any texture you desire, including a full cream soup.
