A rustic and very crunchy farofa, enriched with caramelized onion rings.

Cornmeal Farofa Ingredients:

– 1 cup (tea) of cornmeal flakes

– 1/3 cup(s) bacon, diced

– 1 clove(s) of garlic, minced

– 3 tablespoons of unsalted butter

– 1/2 spoon(s) of olive oil

– Salt to taste

Caramelized onion ingredients:

– 1 unit of onion, small, cut into half-moons about 0.5 cm thick (or red onion)

– 1 tablespoon(s) of olive oil

– 1/4 unit of lemon (juice)

– Salt to taste

PREPARATION:

1. Assemble all ingredients and utensils for the recipe.

2. Wash, peel and finely chop the garlic.

3. Remove the skin from the bacon and cut it into cubes, eliminating the very fatty parts.

4. Wash, peel and halve the onion or red onion, cutting lengthwise. Cut each half of the onion into half-moons about 0.5 cm thick.

5. Wash and dry the lemon, cut and squeeze the juice.

PREPARATION:

Caramelized onion:

1. Heat the oil in a deep frying pan.

2. Gradually add the sliced ​​onion half-moons, stirring so that they cook evenly.

3. Season with salt.

4. Reduce heat and continue stirring until onions begin to turn a deep golden color, about 15 minutes.

5. If they start to stick to the pan during this process, add a little water.

6. Add the lemon juice and continue cooking until soft and caramelised.

7. Turn off the heat, transfer to an auxiliary plate and reserve.

Farofa Corn Flour:

1. Heat the same skillet over medium heat, add the bacon cubes and stir occasionally until browned and dry. Remove them from the pan and set them aside on a paper towel.

2. Shake excess bacon fat from skillet and add olive oil and butter.

3. When the butter melts, lower the heat, add the minced garlic and, stirring, sauté for 2 minutes.

4. Gradually add the cornmeal, stirring to incorporate the seasoning.

5. Add salt.

6. Cook, stirring, until the flour is crisp, about 3 minutes.

7. Add the bacon cubes and onion rings and stir, cooking for another 1 to 2 minutes.

FINISHING AND ASSEMBLY:

1. Serve the farofa in a bowl or to accompany one of your main courses.
