Prestigious ice cream cake recipe

Preparation time: 1h10 (+2h of fridge)

Ingredients:

  • 3 eggs
  • 1 cup of water (tea)
  • 1 cup of oil (tea)
  • 2 cups sugar (tea)
  • 1/2 cup cocoa powder (powdered)
  • 2 1/2 cups (tea) wheat flour
  • 1 tablespoon of baking powder
  • Butter and wheat flour for greasing

Filling

  • 1 can of condensed milk
  • 100 g of grated coconut
  • 1 tablespoon of butter

Syrup

  • 1 glass of coconut milk (200 ml)
  • 1/2 cup (tea) of milk
  • 4 tablespoons of sugar

Roof

  • 200 g of chopped milk chocolate
  • grated coconut for dusting

Method of preparation:

  1. In a blender, beat the eggs, water, oil, sugar, chocolate powder and flour until smooth.
  2. Add the yeast and mix with a spoon.
  3. Pour into a medium, greased and floured rectangular cake pan and bake in a preheated medium oven for 35 minutes or until a toothpick comes out clean. Remove from the oven, let cool and unmold.
  4. For the filling, bring the condensed milk, coconut and butter over medium heat, stirring until thickened. Remove from heat and leave to cool.
  5. For the syrup, in a skillet over medium heat, combine the coconut milk, milk, and sugar.
  6. Bring to a boil and cook for 5 minutes, stirring occasionally. Remove from heat and leave to cool.
  7. For the glaze, melt the chocolate in a double boiler or in the microwave and add it to the cream.
  8. Then cut the cake in half, wet it with half of the syrup and spread the filling.
  9. Arrange the other part of the dough and water with the remaining syrup.
  10. Spread the glaze, sprinkle with coconut and cut into small pieces.
  11. Wrap one by one in aluminum foil and refrigerate for 2 hours.
  12. Then, remove from the fridge and serve.
