Ingredients:
- 3 medium onions
- 2 thighs with drumsticks
- 200ml of white wine
- 200 g of Portobello mushrooms
- 2 sprigs of thyme
- salt
- pepper
- paprika
- 1/2 cup of wheat flour
Method of preparation:
Season the thighs and thighs with salt, pepper, and paprika. Then roll them in wheat flour and set aside. Heat a pan with a drizzle of olive oil and a little butter and add the onions. Lower the heat and cook until they are caramelized. At this stage it is important to add salt and pepper to speed up cooking. Then add the mushrooms and brown them. Book everything.
In the same pan, add more olive oil and arrange the chicken skin side down. Once golden on one side, turn it over and brown it on the other side.
Add the wine and let it evaporate. Then return with the onion, mushrooms and add vegetable stock or hot water. Cover and stir occasionally until chicken is cooked through. If needed, add more liquid during this process. Finish with the green smell of your choice
