A São Paulo burger shop sells sandwiches with wagyu beef, originally from Japan, which has earned it the title of “world’s most expensive” for its tenderness and flavor.
Koburger, with units in the neighborhoods of Pinheiros, Itaim and Vila Mariana, in São Paulo, is able to sell its products at an affordable price, thanks to its own herd, raised on a farm located in Boituva, in the hinterland of São Paulo , where there is also a burger shop.
“Our meat is certified by the Brazilian Wagyu Breeders Association. It is an extremely high quality meat, interspersed with fat, known for its tenderness, juiciness, flavor and aroma,” explains Henry Nakaya, one of the club’s partners.
In addition to Boituva, cattle are raised in three other farms: Campo Grande-MS, Itatinga-SP and Iperó-SP. “We care a lot about animal welfare. Part of our cattle’s diet comes from the production of soy sauce, it is in fact a by-product of the production of soy sauce, therefore natural and rich in nutrients”, adds the entrepreneur .

Some highlights of the Koburger menu, led by chef Thiago Gil, are:
Baconzolla 3.0, which contains 150 grams of wagyu burger, paprika mayonnaise, gorgonzola cream au gratin in a bacon ring, crunchy onion, spicy sauce, rocket on brioche bread and costs R$59.
Another successful sandwich is the Rock Burger, served on Australian bread with 150 grams of wagyu hamburger, homemade mayonnaise, red onion, tomato, American cheese breading, farofa bacon and spicy sauce. The cost is R$56.00.
The Kobe Salad Bacon comes on a brioche bun with 150 grams of wagyu hamburger, house mayonnaise, American cheese, crispy bacon, iceberg lettuce, red onion, tomato and special honey mustard dressing. The sandwich costs R$ 45.00.
The children’s menu costs R$40 and includes two mini wagyu cheeseburgers on a brioche bun served with a portion of fries and house mayonnaise.
Why is it called “the most expensive meat in the world”?
Wagyu, according to Henry, have genetics that facilitate a higher incidence of intramuscular fat, known as streaky fat, resulting in more marbling than other breeds.
“This fat is called “good fat”, it is not saturated and it is what guarantees juiciness, aroma and flavor incomparable with other meats from other cattle breeds. This is why it is considered the most expensive meat in the world”, he explains.
According to the businessman, wagyu beef has always attracted his and his partners’ attention for its incomparable differences, juiciness, flavour, aroma and tenderness. “These differences were the motivators for starting production. Furthermore, the fact that the cattle are of Japanese origin, therefore already present in our culture, and the possibility of verticalising the supply chain that we already had motivated us to start breeding”.
Additionally, the rules for registration, production and certification contribute to the high price of Kobe beef. To obtain the certification issued by ABCBRW it is necessary to respect a series of rules, ranging from the age of slaughter to the number of teeth in the animal’s mouth.
The exclusive partnership with two large certified slaughterhouses allows Koburger to offer more competitive prices in stores.
“We have total control of the production chain, guaranteeing quality throughout the process, from field to fork”, completes Nakaya.
