Bolognese lasagna with white sauce
ingredients
Pasta
- 3 cups of tea Rice flour
- 1 cup potato starch
- 1/2 cup sweet cassava starch
- 3 eggs
- 5 tablespoons of oil
- 1 pinch of salt
- 300 g of cooked cassava
- Water and olive oil as needed
Bolognese sauce
- 500 g of minced meat
- 1 teaspoon of salt
- 1 teaspoon oregano
- 2 peeled and seeded tomatoes, cut into small pieces
- 200 g of tomato paste
- 1/2 cup water
white sauce
- 2 tablespoons butter
- 2 1/2 tablespoons cornstarch
- 500 ml of milk
- 1 box of cream
- 1 teaspoon of salt
- 1 pinch of nutmeg
Assembly
- 250 g of cheese Mozzarella cheese sliced
- 2 tablespoons grated parmesan
Preparation method
Pasta
In a container, mix the rice flour, potato starch and sweet cassava starch. Reserve half a cup of this mixture and add the remaining ingredients to the other portion. Mix until you obtain a homogeneous mass. Add half a cup of water until the mixture no longer sticks to your hands. Leave to rest for 1 hour.
Using a rolling pin, roll out the dough very thinly and sprinkle it with the reserved flour mixture. Cut into small rectangles. Place them in a pan with boiling water and a drizzle of olive oil, over medium heat, and cook until they float to the surface. Drain them with a slotted spoon, place them on a plate greased with olive oil and set aside.
Bolognese sauce
In a pan, heat the oil over medium heat and brown the meat until it loses its reddish colour. Add the salt and oregano and leave to brown. Add the tomatoes, tomato paste and water. Cook for about 10 minutes, or until the sauce has thickened, and set aside.
white sauce
In a deep pan, heat the butter over low heat. When it starts to melt, add the cornstarch and let it brown, stirring constantly. When it has reached the consistency of the dough, gradually add the milk, stirring continuously. Add the cream, salt and nutmeg and mix. Reserve.
Assembly
In a refractory pan, place a portion of Bolognese sauce and cover with a layer of pasta, add a portion of béchamel and cover with mozzarella. Repeat the layers until the edge of the container. Top with parmesan and bake in a preheated oven at medium temperature for about 20 minutes or until golden brown.
Roast chicken with potatoes
ingredients
- 4 pieces of thigh chicken
- 4 pieces of chicken legs
- 4 medium potatoes, peeled and cut into wedges
- 3 tablespoons of olive oil
- 2 cloves garlic, minced
- 1 teaspoon sweet paprika
- 1 teaspoon dried thyme
- Salt and ground black pepper to taste
- Chopped parsley for garnish
Preparation method
In a bowl, mix olive oil, garlic, paprika, thyme, salt and pepper, forming a marinade. Add the chicken pieces to the bowl and make sure they are well coated in the marinade. In a large baking dish, arrange the potato slices on the bottom. Then, place the chicken pieces on top of the potatoes in the baking dish. Bake in a preheated oven at 200ºC for approximately 45 minutes or until the chicken is fully cooked and the potatoes are golden and soft. Remembering that it is important to turn the chicken pieces and potatoes halfway through cooking to obtain even cooking. Remove the dish from the oven and complete the decoration with chopped parsley before serving.
Fish fillet
ingredients
- 500 g of fish fillet (tilapia, San Pietro or other)
- 4 potatoes, peeled and cut into wedges
- 1 onion diced
- 1 tablespoon capers
- Green chilli, coriander and olive oil to taste
- 2 chopped tomatoes
- 1/2 chopped pepper
- 1/2 tablespoon salt
- 1 clove garlic, squeezed
Preparation method
In a container, season the fish fillets with salt and garlic and set aside. In a bowl, mix the tomatoes, onion, peppers and capers. Season with salt, add the green chillies and coriander, creating a tasty tomato mixture and set aside. Grease a baking tray with olive oil and line the bottom with raw potatoes, creating a base. Arrange the fish fillets on the potatoes, ensuring even distribution.
Cover the fish with the tomato mixture prepared previously and add plenty of olive oil. Bake in the preheated oven at 180°C and cook for 40 minutes, until the fish is perfectly cooked and the surface is golden. The dish is ready when the liquid accumulated on the bottom of the pan has evaporated and everything is golden.
Risotto with beets
ingredients
- 1 tablespoon olive oil
- 1 onion chopped
- 11/2 cup arborio rice
- 1/2 cup tea White wine
- 3 beets
- 1 tablespoon butter
- Grated parmesan to taste
- 1 1/2 liters of homemade vegetable broth mixed with the beetroot cooking broth
Preparation method
Wash and peel 2 beets. Cut each into 4 parts and cook them over medium heat in a pan with water and a pinch of salt until soft. Cut the other beetroot into squares and cook it in another pan, again over medium heat, with a little water. Cook until they are al dente. After cooking the 2 beets, drain them and keep the cooking broth aside. Blend the cooked beets in a blender or food processor until pureed. If necessary, add a little cooking water to help it beat.
In a pan, brown the onion in olive oil. Then add the rice and brown it for 5 minutes, stirring constantly. Add the white wine and mix on the heat until reduced. Then start adding a ladle of broth and mix until it has reduced. Continue doing the same procedure, adding the broth with a ladle until you reach the desired point. When the rice is al dente, add the beetroot cut into pieces and the beetroot puree. Continue stirring until the rice is ready al dente, add the butter and freshly grated parmesan. Serve immediately.
