ingredients

  • 1 cup cooked white quinoa grains
  • 1/2 cup oat grains
  • 1 cup pumpkin puree (preferably toasted so as not to absorb water during cooking);
  • 200 g chopped mushrooms of your choice (shimeji, portobello, paris);
  • 2 tablespoons chopped walnuts;
  • 1 small onion diced;
  • 2 cloves of garlic minced;
  • Chopped mint, parsley and chives to taste;
  • Salt and black pepper to taste;
  • 2 tablespoons of olive oil;
  • ½ teaspoon Syrian pepper.

Preparation method

In a bowl add all the ingredients and mix well. Season with salt, olive oil, pepper and fresh herbs. Adjust the seasoning. Grease a 1.3 liter refractory baking dish with olive oil. Transfer the mixture to it and compact it by pressing it with the back of a spoon. Make diagonal grooves and drizzle with olive oil. Bake in a preheated oven at 180° for about 35 minutes or until golden brown.
