Ingredients:
- 500 g diced chicken breast
- 300 g of pumpkin
- 200ml coconut milk
- 1/2 lemon
- 1 onion
- 4 cloves of garlic
- 2 diced tomatoes, skinned and seeded
- curry
- ginger powder
- salt
- pepper
- coriander
Preparation method:
Season the pumpkin with olive oil, salt and pepper and place in the oven to cook for about 35 minutes at 180 degrees or until soft. Then blend it in the blender with the coconut milk and set aside.
In a hot pan with butter, add the diced chicken, brown it, add the spices and then the onion and garlic. Brown and add the lemon juice, diced cherry tomatoes and pumpkin sauce. Wait for it to warm up. If necessary, adjust the consistency with water and complete with coriander.
