Zucchini Quiche

ingredients

Pasta

  • 2 1/2 cups flaxseed meal
  • 5 tablespoons of water
  • 2 teaspoons of cumin
  • 1 pinch of nutmeg
  • Salt to taste
  • Greasing oil
  • Flaxseed flour to the flour

Filling

  • 200 ml of unflavoured low-fat yoghurt
  • 2 eggs
  • 1 pinch of salt
  • 1/2 cup shredded white cheese
  • 1 courgette, peeled and cut into slices

Preparation method

Pasta

Place the flaxseed flour and water in a container and mix well. Cover with cling film and leave to rest for 40 minutes. Then add the rest of the ingredients and mix until you obtain a smooth mixture. Grease a baking tray with a removable base with olive oil and flour it with flaxseed flour. Place the dough on it, lining the bottom and sides and bake in the preheated oven at medium temperature for 5 minutes. Turn off the oven and set aside.

Filling

Place the eggs in a container and, using a fork, beat them well. Add the yogurt and salt and stir to combine. Reserve. Arrange the courgette slices on the quiche dough, cover with the white cheese and pour the yogurt mixture on top. Bake in a preheated oven at medium temperature until golden brown. Serve immediately.

Tip: serve sprinkled with chopped parsley.

Flaxseed bread with chia

ingredients

  • 2 eggs
  • 1 tablespoon coconut oil
  • 1 cup chia seeds
  • 1 teaspoon fine pink salt
  • 2 tablespoons golden flaxseed meal
  • 1 tablespoon organic yeast
  • 60 g of oatmeal
  • Coconut oil for greasing

Preparation method

Place the eggs in a container and, using a fork, beat them well. Add the rest of the ingredients, excluding the yeast, and mix until you obtain a smooth mixture. Finally add the yeast and mix to incorporate it. Divide the dough into two equal parts, cover with cling film and leave to rest until it doubles in volume. Then form two balls of dough and place them on a baking tray greased with coconut oil. Bake in a preheated oven at medium temperature until golden brown. Serve immediately.

  • 1 kg of minced meat
  • 2 cloves of garlic, peeled and crushed
  • two egg
  • 1 cup golden flaxseed meal
  • Salt and ground black pepper to taste
  • Greasing oil

Preparation method

Place the minced meat, garlic, black pepper and salt in a container and mix well. Add the eggs and mix to combine. Gradually add the flaxseed flour and mix until you obtain a smooth consistency. Then, with the help of a spoon, take some dough and form a ball. Repeat the operation with all the dough and place it on a baking tray greased with olive oil. Place in a preheated oven at medium temperature until golden brown. Serve immediately.
