Churro roll recipe

ingredients
- 8 eggs (whites and yolks separated)
- 8 tablespoons of sugar
- 8 tablespoons of wheat flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon of yeast
- Margarine for greasing
- 2 1/2 cups (tea) creamy dulce de leche
- Powdered sugar and cinnamon for sprinkling
Preparation method
- Using a mixer, beat the egg whites until stiff.
- Without stopping whisking, add the egg yolks, one by one.
- Add the sugar and beat to combine.
- Add the flour little by little, beating until you obtain a homogeneous mixture.
- Add the cinnamon, baking powder and mix gently with a spoon.
- Transfer to a 28cm x 42cm baking tray lined with greased baking paper and place in a preheated medium oven for 15 minutes or until set, without allowing it to brown.
- Turn out while still hot on a clean, damp tea towel, remove the baking paper and roll up with the help of the tea towel.
- Leave to cool and unroll.
- Spread half the dulce de leche over the dough, leveling it well.
- Roll up like a jelly roll and refrigerate for 1 hour.
- Remove from the oven and cover with the remaining dulce de leche, using a piping bag fitted with a nozzle.
- Sprinkle with sugar, cinnamon and serve the churro roll.
