Country beans recipe

Time: 30 minutes (+1 hour soaking)

Performance: 4 servings

Difficulty: easy

Ingredients:

  • 1 1/2 cups (tea) carioca beans
  • 1 bay leaf
  • 1 whole garlic clove, unpeeled
  • 1 tablespoon of oil
  • 1 clove of minced garlic
  • 1/2 cup skinless pepperoni, diced
  • Pork shank cut into 150 g cubes
  • Salt to taste

Preparation method:

  1. Leave the beans to soak in water for 1 hour.
  2. Drain, place the beans in the pressure cooker with the bay leaves, whole garlic and cover with water up to 3 fingers above the beans.
  3. Cover and cook for 10 minutes, over low heat, once the pressure has started.
  4. Wait for the pressure to release naturally and open the pan.
  5. Store the beans in a bowl.
  6. Heat the pressure cooker with the oil over medium heat and fry the chopped garlic until it almost starts to brown.
  7. Add the peppers, ham, bacon and fry for 3 minutes or until golden brown.
  8. Add the onion and fry for 2 minutes.
  9. Pour the beans with the broth and season with salt.
  10. Cover and cook for 5 minutes, over low heat, from when the pressure begins or until the beans have softened and the broth has thickened.
  11. Pour onto a serving plate and serve the country beans.
