Tripe recipe with traditional white beans

Ingredients:
- 1.5 kg of tripe in strips
- 1/2 cup (tea) lemon juice
- 2 tablespoons of oil
- 2 cloves garlic, minced
- 1 sliced pepperoni sausage
- 500 g of white beans soaked for 8 hours
- 1 teaspoon paprika
- 2 chopped tomatoes
- Salt, black pepper and chopped parsley to taste
- 1 bay leaf
Preparation method:
- Remove the fat from the tripe and wash it well.
- Place it in a bowl, cover it with water and lemon juice.
- Let it rest for 20 minutes.
- Place it in a pan with boiling water and cook for 5 minutes.
- Repeat the operation 2 more times and drain.
- Heat a large pan over a medium heat with the oil and sauté the onion and garlic for 5 minutes.
- Add the peppers, tripe, beans, paprika, tomato, salt, pepper and bay leaf and pour in the water to cover them.
- Cook for 1 hour over low heat with the pan covered or until softened.
- Add water as needed as it dries, but you should get a thick broth.
- Sprinkle with parsley and serve with white rice.
