Recipe: learn how to prepare red berry cheesecake

In its more traditional version, with red fruit sauce, cheesecake is an excellent option for those hosting friends or relatives and wanting a quick and tasty preparation. Its delicacy and combination of flavors make it surprising for all palates.




Originating in ancient Greece, cheesecake – which means cheesecake in English – has evolved over the years, becoming a delicacy known in many cultures, from North American to Japanese. Furthermore, it can be customized in many ways and acquires even more flavor with the addition of fresh fruit topping, chocolate sauce, caramel or even pieces of chestnuts or walnuts, in a unique contrast of textures. Ingredients:

Basic

  • 150 g of cornstarch biscuits
  • 50g unsalted butter at room temperature

Filling

  • 680 g of cream cheese
  • 240 g of white sugar
  • 20 g of corn starch
  • 2 eggs
  • 180 g of fresh cream
  • 15 ml vanilla extract

Syrup

  • 100g frozen blackberries
  • 100 g of frozen raspberries
  • 120 g of sugar
  • Lemon drops
  • Fresh red fruits

Preparation method

On low speed, beat in the cream cheese, sugar, and cornstarch. Add the eggs, vanilla and fresh cream. Beat the filling until smooth and slightly aerated and, once ready, pour it into the base.

Cook in an oven previously heated to 180°, in a bain-marie, for approximately 1h15. Leave it to cool with the door ajar for another 1 hour, then put it in the fridge and let it rest until the next day so that it acquires consistency.

For the syrup, place all the ingredients in a pan and heat. Allow to boil until it reaches gelatinous point and set aside in the refrigerator. Pour the syrup over the cheesecake and decorate with fruit to best enjoy your dessert.
