Pumpkin quiche recipe with catupiry

Preparation time: 1h (+30min rest)

Performance: 8 servings

Difficulty level: easy

Ingredients:

  • 2 cups (tea) of wheat flour
  • 1/2 teaspoon salt
  • 1/2 cup cold cubed butter
  • 4 tablespoons ice water

Filling

  • 2 cups diced cooked squash
  • 1 can of cream (300 g)
  • 2 eggs
  • 3 tablespoons grated parmesan
  • 1/2 cup (tea) Catupiry® cream cheese
  • Salt and black pepper to taste
  • 1/2 cup desalted, cooked and chopped beef

Preparation method:

  1. Place the flour, salt and butter in a bowl and mix, working with your fingertips until you obtain a crumb-like consistency.
  2. Add the water little by little, mixing just to combine.
  3. Wrap the mixture in cling film and let it rest in the refrigerator for 30 minutes.
  4. Remove and roll out the dough with the help of a rolling pin on a smooth surface, covered with two sheets of plastic.
  5. Line the bottom and sides of a medium springform pan with the dough.
  6. Flatten the edge by cutting off the excess with a knife.
  7. Place in preheated medium oven for 10 minutes.
  8. For the filling, blend the pumpkin, cream, eggs, parmesan and cream cheese in a blender, season with salt and pepper.
  9. Mix with the dried meat and pour over the mixture.
  10. Return quiche to preheated medium oven for 30 minutes or until golden brown.
  11. Remove from the oven, let cool, turn out your pumpkin quiche and serve it.
