Ingredients Wheat-free Cauliflower Cupcakes

– 1 cup(s) of fresh cauliflower

– 1 clove(s) of minced garlic

– 1/4 unit of chopped onion

– pepper to taste (optional)

– Salt to taste

– 1 unit(s) medium egg(s)

– chopped parsley to taste

– green onion chopped to taste

– 2 tablespoons of oat flour

– 1 tablespoon(s) of corn starch

– 2 tablespoons of grated parmesan

– 1/4 teaspoon(s) of chemical yeast

– oil to taste for roasting and greasing the pan(s).

Ingredients TO ACCOMPANY (OPTIONAL)

– pepper sauce to taste (optional)

PREPARATION:

  1. Separate all ingredients and utensils for the recipe.
  2. Add the water to a pan and when it boils, cook the cauliflower (measure the quantity still in florets) for 3 minutes. Remove and place in a bowl with ice water to stop cooking. Reserve.
  3. Wash, chop and mince all the ingredients for the preparation or, if you prefer, use the food processor to mince the onion and garlic.
  4. Grease the baking tray(s) with oil.
  5. Preheat the oven to 220°C: the gnocchi will be cooked.

PREPARATION:

Cauliflower cake without wheat and without frying:

  1. Grate the parmesan, if you didn’t buy it grated, or grate it directly in the food processor.
  2. Drain the cauliflower well and process it until it forms small pieces.
  3. In the food processor along with the cauliflower, add the onion, garlic, salt, pepper, egg(s) and blend to combine.
  4. Then add the grated cheese, oat flour, corn starch and yeast.
  5. Beat just enough to mix and form a homogeneous, consistent but slightly soft mass.
  6. Add the chopped parsley and chives, mix everything together with a spatula.
  7. Take a quantity of dough, using a spoon as a measure, and form the gnocchi.
  8. Arrange the gnocchi on one or more greased baking sheets, side by side, as if they were separate stacks.
  9. Put a drizzle of oil on each.
  10. Bake for 12-15 minutes or until golden brown.

FINALIZATION AND ASSEMBLY:

  1. Arrange the wheat-free cauliflower pancakes on a serving plate or, if you prefer, distribute them among the plates, next to the main course.
  2. These dumplings go very well with a variety of dishes and can also be served as an appetizer.
  3. Serve with pepper sauce (optional).
