Gluten-free and dairy-free carrot cake, a healthy version of this favorite




The famous carrot cake, very light and tasty, gluten-free and lactose-free.

Ingredients GLUTEN-FREE AND LACTOSE-FREE CARROT CAKE

– 3 medium-sized carrots, peeled and cut into slices

– 1 cup(s) oil + a little to grease the pan (or coconut oil)

– 4 units of eggs

– 2 cups demerara sugar

– 2 cups gluten-free flour mix + a little for dusting the pan

– 1 tablespoon(s) of chemical yeast B

Ingredients ECONOMIC CHOCOLATE COVERING gluten-free and lactose-free (with cocoa powder):

– 4 tablespoons of chestnut milk + a little more if you want a thinner syrup. (or other option of your choice)

– 4 tablespoons cocoa powder (or cocoa powder) b. C

– 1 dessert spoon(s) of lactose-free butter

– 2 tablespoons demerara sugar, or as much as you like.

PREPARATION:

  1. Separate all ingredients and utensils for the recipe.
  2. Wash and peel the carrots and cut them into medium slices.
  3. Sift the flour.
  4. Grease a mold with oil and sprinkle with gluten-free flour. 1 standard recipe corresponds to a portion for 4 people: use a 30×20 cm rectangular pan or a 25 cm round one.
  5. Preheat the oven to 180°C.

PREPARATION:

Gluten-free and lactose-free carrot cake:

  1. In a blender, blend the carrot slices with oil or coconut oil.
  2. While whisking, add the whole eggs, one at a time, until you obtain a smooth mixture.
  3. Add the sugar and beat to combine.
  4. Transfer the dough into a bowl and, with the help of a wire whisk, gradually add the gluten-free flour.
  5. Finally add the yeast.
  6. Place the dough in the already buttered and floured pan.
  7. Place in the preheated oven at 180°C and cook for approximately 40-50 minutes (the time may vary depending on the oven).

Economical CHOCOLATE COVERING gluten-free and lactose-free (with cocoa):

  1. Bring all ingredients to the boil and stir well until incorporated and slightly thickened.
  2. Let it cool, but not completely.

Gluten-free and lactose-free carrot cake:

  1. Once the estimated cooking time has passed, test with a toothpick, insert it into the center of the cake and if it comes out clean, it is ready.
  2. Remove from the oven, shake the pan slightly to see if the cake loosens.
  3. Invert onto a plate or cutting board.

FINALIZATION AND ASSEMBLY:

  1. Invert the cake onto the platter or serving platter you will serve it on.
  2. Cover with the still hot chocolate icing.
  3. Leave to cool and cut into pieces.
