With an intimate and “secret” proposal, the Kanoe Japanese restaurant, located in the Jardins neighborhood of São Paulo, has only eight seats per night and is open by reservation only.
Despite the “hefty” price of the menu, which costs R$ 1,095 per person, with drinks and service paid separately, the waiting list is full until January 2024.
The cuisine is led by chef Tadashi Shiraishi with a rigorous selection of in-house cured fish and “signature recipes that blend the freshness and youthful energy of current Japanese references with a deep reverence for the country’s glorious past”, we read in the official website description of the place.
The establishment offers customers the experience of watching all the food being prepared while sitting at the counter in front of the kitchen. It operates from Tuesday to Saturday, promptly at 7pm, for a duration of approximately 3 hours. The official Kanoe website informs that “for privacy reasons, the address and password to access the location are provided only to guests who have booked, hours before the visit”.
The menu is served in 18 stages and consists of sushi with a variety of flavors including: Spanish tuna, caviar, dog’s eye, horse mackerel, buri and sororoca.
“The Kanoe experience is built around Japan’s most important ingredient: RICE,” the description on the website states.
The menu also includes desserts and coffee, in addition to natural sparkling wines served upon arrival.
