Vegan Cheese Bread Ingredients:
– 150g firm tofu cheese (¾ cup shredded tofu for every 2 servings)

– 1 1/2 tablespoons olive oil + a little to grease your hands
– 2 tablespoons of nutritional yeast flakes
– 1/3 cup(s) of sweet cassava starch
– 1/3 cup(s) of acidic cassava starch
– 2 dessert spoon(s) of water – see recipe
– 1/2 cup(s) vegan cheese (parmesan or mozzarella) + a little to finish (optional)
– Salt to taste
– oil to taste
PREPARATION:
- The yield for every 2 servings is 12 units measured with a dessert or ice cream spoon.
- Nutritional yeast, which has a cheese-like flavor, is a great addition to the recipe, so it’s important to use it.
- Separate all ingredients and utensils for the recipe.
- Cover the baking tray(s) with a sheet of baking paper or grease it with a drizzle of oil.
PREPARATION:
Vegan Cheese Bread – Dough:
- In a bowl with a fork or in a food processor, mix the tofu with the olive oil, salt and nutritional yeast flakes until it becomes a smooth and homogeneous cream.
- If you used the food processor to knead the dough, transfer the dough to a bowl.
- Add the sweet and sour starch and mix with a spatula or spoon, not with your hands, as in this recipe, the ideal consistency of the dough is when it still sticks to your hands.
- If the dough is too dry, add a part of the water (see quantity in the ingredients) and top up, if necessary, with the rest, this depends on the humidity of your tofu.
- When the dough is smooth, add the grated vegan cheese (optional) to intensify the flavor.
- Preheat the oven to 200°C.
Vegan Cheese Bread – Shaping and Baking:
- To shape the vegan cheese bread, place a drizzle of olive oil on a saucer to grease your hands.
- Take a portion of dough, using a small dessert or ice cream scoop (smaller than a standard ice cream scoop) as a measurement and roll it.
- Transfer the cheese bread to the previously greased or lined baking tray and repeat the operation with the remaining dough.
- Leave space between the loaves: they will rise during cooking.
- Place in a preheated oven at 200°C and cook for approximately 20 – 25 minutes or until the rolls rise, with a crispier crust on the outside and slightly golden.
- Remove from the oven and serve later.
FINALIZATION AND ASSEMBLY:
- Serve the vegan cheese bread for breakfast or snack.
