Guava panettone recipe

Time: 2h20 (+1h20 rest)

Ingredients:

  • 2 tablets of organic fresh yeast (30g)
  • 1 1/2 cups (tea) sugar
  • 1/2 cup (tea) warm water
  • 5 cups (tea) of wheat flour
  • 1/2 tablespoon salt
  • 3 eggs
  • 1 tablespoon honey
  • 1/2 cup butter (tea).
  • 1 tablespoon panettone essence
  • Wheat flour for dusting
  • 3 1/2 cups cubed guava paste
  • 1/2 cup (tea) water
  • Powdered sugar for dusting

Preparation method:

  1. In a bowl, place the yeast, 1 tablespoon of sugar and mix.
  2. Add the water, 4 tablespoons of flour, mix and leave to rest for 20 minutes.
  3. Add the salt, eggs, honey, butter, essence, remaining flour and sugar, mix and knead for about 10 minutes or until you obtain a soft and slightly sticky dough.
  4. Sprinkle the flour over 2 cups of the guava paste and gently mix the guava paste with the dough.
  5. Place the dough in a panettone mold and let it rest for 1 hour.
  6. Bake in a preheated medium oven for 40 minutes.
  7. Remove from the oven, turn out onto a plate and set aside.
  8. In a pan, mix the remaining guava paste and water and cook over medium heat, stirring constantly, until it melts and forms a syrup.
  9. Remove from the oven, cover the panettone with the syrup, sprinkle with icing sugar, decorate as desired and serve immediately.
