Ingredients for Pumpkin Soup

Pumpkin – 1.5 kg;
Chicken or vegetable broth – 1 liter;
Medium-sized onion – 1 piece;
Garlic – 2 cloves;
Cream 20% fat – 150 ml;
Salt – 1 tsp. or to taste;
Chili flakes – ¼ teaspoon or to taste;
Fresh ginger – peeled root about 2 cm wide.

How to cook pumpkin puree soup

  1. We recommend using butternut pumpkin: it has a neutral taste without pronounced sweetness and a thin skin. To quickly peel a pumpkin, cut it in half and remove the seeds. Place the halves (if using both) in a mold, pour a little water and place in an oven preheated to 150 C for 10-12 minutes. The steamed skin can be easily removed with a regular paring knife.
  2. Cut the peeled pumpkin into pieces and place it in a saucepan. Put diced onions and garlic cloves in there – you don’t even need to cut them. Fill everything with broth.
  3. Bring the future soup to the boil, then reduce the heat and let everything simmer for 10 minutes under the lid. After this time, add salt, pepper and finely grated ginger to the pan, close the lid and leave for another 5 minutes. Use a wooden skewer to check that the pumpkin is ready. If the skewer sinks easily, as if it were in butter, everything is ready. All that remains is to remove the soup from the heat, puree it with a hand blender until smooth and creamy, then add the cream and blend everything again with a blender. You can have lunch!
