A registered nutritionist at GetNinjas provides tips on how recipes can be beneficial to your health

According to United Nations data, Brazil is among the 10 countries that waste the most food in the world. The IBGE reported that approximately 46 million tons of food are wasted each year, representing 30% of all Brazilian production. Gooxxy, a greentech replacement product, believes that many foods that are thrown away can be used in homemade recipes, such as banana peels, vegetable stems, pineapple peels, among others. Clinical and sports nutritionist Andreia Camilla, who works for GetNinjas, the largest contract services platform in Brazil, comments on the importance of reusing food. “The peels contain many more nutrients, like bananas, the pulp is an excellent source of potassium, while the peel contains twice as much and provides approximately 33% of the daily nutritional needs in men and 43% in women, in addition as a good source of vitamin C”, explains Andreia, who adds that they are allies in the reduction of cholesterol and the prevention of cardiovascular diseases. “Stale rice creates a film of ‘resistant starch,’ which is a type of carbohydrate that is not absorbed by the body and increases good bacteria in the gut and health, thus optimizing weight loss. Pumpkin peel is also a source of vitamin A and fibre”, comments the nutritionist. The professional also states that the stalks are rich in dietary fiber, contain vitamin C, potassium, zinc and are an excellent source of iron. “Broccoli stems; cauliflower; buttered cabbage; chard; beetroot; turnip and parsley, which are generally discarded, contain up to twice as many of these vitamins as the leaf or inner part of the food,” she adds. Banana peel brigadeiro
Ingredients:

  • Well washed peels of 2 bananas;
  • 1 can of condensed milk;
  • 4 tablespoons of chocolate powder;
  • 1 tablespoon margarine or butter;

How to do:

  • Cut the banana peels finely chopped;
  • Take all the ingredients and blend them in the blender;
  • Once you have obtained a more homogeneous mixture, place it on a low heat;
  • Continue stirring until the bottom begins to loosen;
  • Turn off the heat and let cool;

Risotto with pumpkin crust
Ingredients:

  • Peel of 1 pumpkin, well washed and grated;
  • 1 large onion chopped;
  • 1 cup of water;
  • 1 chopped pepper;
  • 3 cups cooked rice tea;
  • ½ box of cream de lete;
  • ½ cup cottage cheese;
  • Salt, green perfume and soy sauce to taste:

How to do:

  • Fry the onion well;
  • Add the grated pumpkin peel with the water and leave to cook for a maximum of 15 minutes;
  • Add the pepper and brown well;
  • Gradually add the rice, alternating with cream and cream cheese;
  • Season with green perfume, salt and soy sauce;

Vegetable stem and peel pie
Ingredients:

  • 1 cup chopped cabbage stalk;
  • 1 cup chopped carrot peels;
  • 1 cup chopped beet peels;
  • 1 cup chopped spinach stalks;
  • 1 chopped pepper;
  • 1 chopped onion;
  • Garlic and salt to taste

Pasta:

  • 300 g of wheat flour;
  • 7 g of salt;
  • 170 ml of water;
  • 250 g of butter.

How to do:
Pasta:

  • Place the wheat flour, salt and water in a bowl;
  • Mix everything until you obtain a homogeneous consistency;
  • Cover the dough with cling film and let it rest for 30 minutes in the fridge;
  • After this time, roll out the dough on a smooth and floured surface;
  • Roll out the dough into a rectangular shape, place the butter in the center and fold it, bringing the sides towards the centre. Repeat this process three times and set aside.

Filling:

  • In a pan, brown the garlic, onion and pepper until golden;
  • Add the peels and stems, brown for about 10 minutes;
  • Season with salt and set aside;

Cake assembly:

  • Divide the dough into two equal parts and roll it out with a rolling pin;
  • Grease a baking dish, preferably with a removable bottom, with wheat flour and butter and place half the dough;
  • Add the filling and cover with the rest of the dough;
  • Brush with egg yolk;
  • Bake in a preheated oven at 200ºC until golden brown;
  • Serve while still hot;
