Ingredients CORN CAKE WITHOUT FLOUR
– 4 ears of fresh green corn, threshed
– 1 cup(s) of milk
– 3 units of eggs
– 1 teaspoon(s) of chemical yeast THE
– 2 tablespoons softened unsalted butter + a little to grease the pan
– 1 1/2 cups sugar + a little to sprinkle the mold
PREPARATION:
- For an entire recipe, adjust quantity to 4 servings.
- This cake must be cooked in a rectangular or square pan in which the dough is no more than 5 cm high, because being very liquid, if the cake is high it may not cook in the centre.
- Remove the butter from the refrigerator to soften or place it in the microwave for about 15 seconds.
- Separate the utensils and ingredients for the recipe.
- Preheat the oven to 180°C.
- Remove the corn husks and hairs and wash the ears. On a cutting board, using a sharp knife, remove the corn kernels from the cobs.
- Grease a rectangular shape with butter and sprinkle with sugar.
PREPARATION:
Flourless corn cake:
- Place the eggs, butter and sugar in a blender and beat to combine.
- Add the milk and beat some more.
- Add half the corn kernels and beat well, add the remaining corn and continue beating until smooth.
- Turn off the blender, add the yeast and mix.
- Transfer to the greased and sprinkled pan.
- Place in the preheated oven at 180°C and cook for 50-60 minutes.
- The cake should be firm to the touch, but still creamy inside.
- Once you have reached the desired doneness, take it out of the oven and leave it to cool in the mould.
FINALIZATION AND ASSEMBLY:
- Cut into squares, transfer to a plate or hold and serve.
- Store at room temperature.
