Recipe for 4 people.

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Ingredients CORN CAKE WITHOUT FLOUR

– 4 ears of fresh green corn, threshed

– 1 cup(s) of milk

– 3 units of eggs

– 1 teaspoon(s) of chemical yeast THE

– 2 tablespoons softened unsalted butter + a little to grease the pan

– 1 1/2 cups sugar + a little to sprinkle the mold

PREPARATION:

  1. For an entire recipe, adjust quantity to 4 servings.
  2. This cake must be cooked in a rectangular or square pan in which the dough is no more than 5 cm high, because being very liquid, if the cake is high it may not cook in the centre.
  3. Remove the butter from the refrigerator to soften or place it in the microwave for about 15 seconds.
  4. Separate the utensils and ingredients for the recipe.
  5. Preheat the oven to 180°C.
  6. Remove the corn husks and hairs and wash the ears. On a cutting board, using a sharp knife, remove the corn kernels from the cobs.
  7. Grease a rectangular shape with butter and sprinkle with sugar.

PREPARATION:

Flourless corn cake:

  1. Place the eggs, butter and sugar in a blender and beat to combine.
  2. Add the milk and beat some more.
  3. Add half the corn kernels and beat well, add the remaining corn and continue beating until smooth.
  4. Turn off the blender, add the yeast and mix.
  5. Transfer to the greased and sprinkled pan.
  6. Place in the preheated oven at 180°C and cook for 50-60 minutes.
  7. The cake should be firm to the touch, but still creamy inside.
  8. Once you have reached the desired doneness, take it out of the oven and leave it to cool in the mould.

FINALIZATION AND ASSEMBLY:

  1. Cut into squares, transfer to a plate or hold and serve.
  2. Store at room temperature.
