Quiche Lorraine: French recipe to be enjoyed at any time

A quiche it is a type of shortcrust pastry cake of French origin, where the most popular version is the Lorraine. The original recipe uses bacon, Ementhal cheese and cream, creating a creamy filling for a crumbly and very soft dough.




Although it was created in France, quiche was inspired by a German dessert recipe. The name of the dish itself comes from “kuchen”, which in German means “cake”.

Time: 1h10 (+30min in the fridge)

Performance: 10 servings

Difficulty: easy

Ingredients:

  • 1/2 teaspoon salt
  • 2 cups (tea) of wheat flour
  • 6 tablespoons salted butter
  • 3 to 5 tablespoons of ice water

Filling

  • 150 g diced bacon
  • 3 eggs
  • 1 can of cream
  • 1/2 cup milk (tea).
  • Salt and black pepper to taste
  • 1 cup grated ementhal cheese or cheese

Preparation method:

  1. In a bowl, mix the salt, flour and butter with your fingertips until you get a flour consistency.
  2. Add the water little by little, mixing until you obtain a homogeneous mixture.
  3. Wrap in cling film and refrigerate for 30 minutes
  4. Heat a pan and fry the bacon cubes in the fat until lightly browned.
  5. Drain on absorbent paper
  6. Beat the eggs lightly with a fork, add the cream, milk, salt and pepper and mix
  7. Roll out the dough using a rolling pin and line the bottom and edges of a 30cm springform pan with removable base.
  8. Spread the cheese and bacon on the bottom of the pan and pour in the cream.
  9. Bake in a preheated medium oven for 40 minutes or until golden brown.
  10. Unmold and serve.
