Ingredients:
- 500 g of white beans
- 1 chicken cut into pieces
- 2 onions grated
- 3 teaspoons minced garlic
- Chopped parsley and chives to taste
- 1 chopped tomato
- 3 bay leaves
- Salt and black pepper to taste
- 1 cube of meat broth
- 1/2 liter of boiling water
- 1 grated carrot
- 1 small potato, chopped
- 100 g of chopped bacon
- 130 g of tomato paste
- 250 g of Portuguese sausage
- 1 cup (tea) water
- 250 g of sausage
- 250g sliced smoked loin
- 3 tablespoons of oatmeal
Preparation method:
- Soak the beans the day before cooking
- Fry the chicken over medium heat for 3 minutes with 1 grated onion, 1 teaspoon garlic, parsley, chives, chopped tomato, 1 bay leaf, salt and pepper
- Add the beef broth dissolved in the boiling water, cover and cook for 30 minutes
- Reserve 1 cup of the resulting sauce
- Remove the chicken, remove the skin and bones, mince the meat and set aside
- In the meantime, put the beans in a pan, cover them with water and then cook them for 30 minutes.
- Once cooked, add the carrot, potato, remaining garlic, remaining bay leaves and salt to taste and cook for another 10 minutes.
- In another pan, fry the bacon pieces in the fat until melted.
- Remove and reserve
- In the remaining bacon fat, brown the remaining onion
- Add the tomato paste, chopped parsley and chives, the sausage cut into large pieces and 1/2 cup (tea) of water
- Let it boil for 15 minutes
- Add the beans, sausage pieces, loin, chicken, reserved broth and bacon pieces
- Season with salt and leave to cook for another 10 minutes
- Add the oat flour dissolved in the remaining water and cook for 5 minutes
- Then serve hot with white rice.
