3 bread recipes by Olivier Anquier

Brazil’s most famous French baker has shared recipes that could change your breakfast

Baker and entrepreneur, Olivier Anquier, comes from a family passionate about baking. The chef, who has been in Brazil for over 30 years, explains that bread is a very symbolic food for him and his family.

“I am a true bread eater and come from a culture very intimate with it. The good French eat bread at every meal of the day, throughout their lives. Food is always on the plate, from breakfast to dinner. whether sweet or savory This is why I decided to raise the professional banner of this family”, says Anquier.

Between 1995 and 1997, Olivier was at the helm of the “Pain de France”, where he established himself as one of the most renowned bakers in the country. After a few years, when Pain de France already owned two other stores, Olivier decided to leave the company.

In November 1997 it entered into a major partnership with a well-known supermarket chain, which began selling the Olivier bread line exclusively in 40 stores. From that moment on, Olivier Anquier’s bakery achieved a huge clientele that he had never dreamed of having.

The French baker’s first choice was brioche, and he took advantage of this to teach some precious techniques that he uses in his cooking. Anquier recommends preparing the dough the day before baking the brioche, and also gives the precious advice of putting the dough to rest for 12 hours in the fridge before shaping it.
