  • 1/2 pink pitaya
  • 1/3 cup oat milk
  • 3 tablespoons of chia seeds
  • 2 tablespoons coconut milk
  • 1 teaspoon sugar cane molasses
  • Blueberries to decorate

Preparation method

In a blender, blend the pitaya, oat milk, coconut milk and sugar cane syrup until smooth. Transfer to a container, add the chia and mix well. Store in the refrigerator until it reaches the consistency of a pudding. Then serve garnished with blueberries.

Rice pudding with chia

ingredients

  • 1 cup of tea rice
  • Water for cooking
  • 2 cups coconut milk
  • 5 cloves
  • 1 tablespoon chia seeds
  • 3 cinnamon sticks
  • 2 tablespoons xylitol
  • Lemon zest to taste

Preparation method

Place the rice in a pan, cover it with water and cook over medium heat for 15 minutes. Then add the coconut milk, cloves, cinnamon, xylitol and chia seeds and mix well. Cook for another 20 minutes. Turn off the heat, wait for it to cool and serve garnished with lemon zest.

  • 3 tablespoons of oatmeal
  • 2 tablespoons of chia seeds
  • 250ml of water
  • 1 pinch of salt
  • Chopped rosemary and parsley to taste

  • 4 slices of Minas cheese
  • 4 cherry tomatoes cut in half
  • Oregano to taste

Preparation method

Place the oats, chia, rosemary, parsley and salt in a container and cover with water. Mix, cover and let rest for 5 minutes. Then grease a pan with coconut oil and, using a ladle, take some of the dough and place it on the pan. Cook until it starts to boil and turn the other side to brown. Repeat the operation with all the dough and set aside.

Filling

Take one of the pancakes and fill it with cheese and cherry tomatoes. Sprinkle with oregano and fold in half. Repeat the operation with all the dough and then serve.

  • 250 g of cheese grated white
  • 1/2 cup skim milk
  • 40 g of coconut oil
  • 2 eggs
  • 1 1/2 tablespoons chia seeds
  • Salt to taste
  • Coconut oil for greasing

Preparation method

In a pan, add the milk and coconut oil and place over medium heat to heat through. Turn off the heat, add the acidic cassava starch and salt and mix well. Add the eggs, white cheese, salt and chia seeds and mix until smooth. Then, with the help of a spoon, take some dough and form a ball. Repeat the operation with all the dough and place it on a baking tray greased with coconut oil. Bake in a preheated oven at 180ºC until golden brown. Serve immediately.

Mint cream with pineapple and chia

ingredients

Cream

  • 1 cup chopped mint leaves
  • 1/2 cup tea cashew nuts
  • 1 cup chia seeds
  • 250 g of natural yogurt

Pineapple

  • 1 tablespoon coconut oil
  • 1 pineapple peeled and cut into slices

Preparation method

Place all the cream ingredients in a blender and blend until you obtain a smooth consistency. Place in the refrigerator to cool. Meanwhile, grease a pan with coconut oil and heat it over medium heat. Gradually add the pineapple slices and grill. Then arrange the fruit on a plate and serve with the mint cream.
