Ingredients:
- 4 skinless chicken thighs
- 4 skinless chicken thighs
- Salt, black pepper and chopped green chilli to taste
- 5 tablespoons of olive oil
- 1 onion chopped
- 4 crushed garlic cloves
- 1/2 diced yellow pepper
- 1/2 diced green pepper
- 1 diced carrot
- 1 can drained green corn
- 1 cup frozen peas
- 1 diced tomato
- 3 cups parboiled rice
- 2 tablespoons of saffron
- 6 cups boiling water
- Grated Parmesan for sprinkling
- Olive oil for seasoning
Preparation method:
- In a pressure cooker, over high heat, heat the oil and fry the chicken with salt and pepper until golden brown.
- Remove and reserve
- Meanwhile, in the same pan, fry onion, garlic, peppers, carrot, corn, peas, tomatoes, rice, saffron, salt and pepper for 4 minutes, stirring occasionally.
- Return the chicken to the pan, cover with water, cover and then cook for 5 minutes on low heat, once the pressure has started.
- Turn off, let the pressure release naturally and open the pot
- Sprinkle with green pepper and parmesan, drizzle with olive oil and serve immediately.
