Ingredients:

  • 4 skinless chicken thighs

  • Salt, black pepper and chopped green chilli to taste
  • 5 tablespoons of olive oil
  • 1 onion chopped
  • 4 crushed garlic cloves
  • 1/2 diced yellow pepper
  • 1/2 diced green pepper
  • 1 diced carrot
  • 1 can drained green corn
  • 1 cup frozen peas
  • 1 diced tomato
  • 3 cups parboiled rice
  • 2 tablespoons of saffron
  • 6 cups boiling water
  • Grated Parmesan for sprinkling
  • Olive oil for seasoning

Preparation method:

  1. In a pressure cooker, over high heat, heat the oil and fry the chicken with salt and pepper until golden brown.
  2. Remove and reserve
  3. Meanwhile, in the same pan, fry onion, garlic, peppers, carrot, corn, peas, tomatoes, rice, saffron, salt and pepper for 4 minutes, stirring occasionally.
  4. Return the chicken to the pan, cover with water, cover and then cook for 5 minutes on low heat, once the pressure has started.
  5. Turn off, let the pressure release naturally and open the pot
  6. Sprinkle with green pepper and parmesan, drizzle with olive oil and serve immediately.
