A healthy reinterpretation of Padre Pio’s famous cake, which when shared formed a sweet chain of goodness.

FIT Ingredients for the fortune and fortune cake
– 1 cup(s) gluten-free flour mix + a little for dusting.
– 1 cup(s) gluten-free oatmeal
– 1 1/2 cups almond milk (or other milk of your choice)
– 3 tablespoons of clarified butter + a little to grease the pan
– 1/2 cup(s) of candied fruit (gluten-free)
– 1/2 cup(s) raisins (gluten-free)
– 1 cup(s) of coarsely chopped walnuts
– 1 green apple(s), diced
– 1 1/2 cups coconut sugar
– lemon to taste (drops)
– 3 units of eggs (separated whites and yolks)
– 1 teaspoon(s) of vanilla essence
– ground cinnamon to taste B
– nutmeg to taste B
– salt to taste (pinch)
– 1 tablespoon(s) of chemical yeast B

PREPARATION:
- Separate the utensils and ingredients for the recipe. For 1 complete recipe – 4 portions, use a 23 cm diameter baking pan with a central hole.
- Separate the yolks and whites. Place the egg yolks in the bowl and set the egg whites aside to beat later.
- On a cutting board, coarsely chop the walnuts (not chopped).
- Cut the apple into cubes and soak it in water with a few drops of lemon.
- Flour the candied fruit and apple cubes with a little of the gluten-free mix.
- Grease the pan with butter and sprinkle with flour.
- Preheat the oven to 180°C.
PREPARATION:
Fortune and Fortune Cake:
- In a mixer, add the ghee and coconut sugar to the egg yolks and beat until smooth.
- Add the cinnamon and nutmeg.
- Reduce the speed and add, alternately, the vegetable milk, the flour (oat and gluten-free mix), the vanilla essence, whisking continuously, until all the ingredients are well incorporated.
- Remove the bowl from the mixer and mix the candied fruit, raisins, chopped walnuts and apple cubes and a pinch of salt. Reserve.
- In another bowl, beat the egg whites until peaks form.
- Add the yeast to the cake dough and mix.
- Finally, add the egg whites, mixing carefully so as not to lose the air.
- Transfer the cake dough to the greased and floured pan.
- Place in the preheated oven at 180°C and cook for approximately 40-45 minutes.
- To check if it is cooked, do the toothpick test: place the toothpick in the center of the cake, if it comes out clean, it is ready.
- Turn off the oven, remove the cake and shake it to see if it comes loose from the pan.
- Let cool.
FINALIZATION AND ASSEMBLY:
- Place the fortune and fortune cake in shape on the serving plate.
- Using a sieve, sprinkle the surface with icing sugar.
