Tapioca Cheese Bread Ingredients:

– 3 1/2 cups tapioca gum, sifted.

– 400 g of ricotta (without starch)

– 300 g of semi-mature, grated or processed cheese

– salt to taste (optional)

Ingredients TO FINISH

– parmesan to taste, grated, sprinkled. (optional)

Ingredients FOR GREAKING

– oil to taste

PREPARATION:

  1. Separate the recipe ingredients and utensils. If you prefer, you can do this in the processor.
  2. The recipe yields 18 units of cheese bread measured with a heaping teaspoon per 2 servings.
  3. Sift the tapioca starch.
  4. Grate the cheese on the coarse side and transfer to a bowl or use a food processor.
  5. Grease the baking tray(s) with oil.

PREPARATION:

Tapioca cheese bread – dough preparation:

  1. Place the sifted tapioca starch, salt (optional) and cream cheese, along with the cheese, into the bowl or food processor and mix well or beat, working until the dough is smooth, even and slightly soft.
  2. Place the dough in the refrigerator and let it rest for at least 20 minutes.

Tapioca cheese bread: making the balls

  1. After 20 minutes, remove the dough from the refrigerator.
  2. If cooking immediately, preheat the oven to 200°C. Under these conditions, the tapioca cheese bread grows, but may not have a very defined shape.
  3. Put some oil on a plate.
  4. Grease your hands and take a portion of dough weighing approximately 1 heaped teaspoon.
  5. Roll it out to form a ball and place it on a non-stick baking tray greased with a drizzle of oil.
  6. Continue portioning and forming balls and placing them on the baking tray(s), leaving a small space between them, as they will grow once cooked.
  7. Sprinkle a little grated parmesan on top (optional).

Tapioca Cheese Bread – Freeze:

  1. The tapioca cheese bread can be frozen for later consumption.
  2. After freezing, when cooked, they have a nicer shape, but they are still not perfectly round.
  3. To do this, after making the balls, place them on a baking tray or pot covered with cling film and place them in the freezer until completely frozen.
  4. Separate them and transfer them to a plastic bag.
  5. Store in the freezer until ready to use.

Tapioca Cheese Bread – Baking:

  1. Place in a preheated oven at 200ºC and bake for approximately 30-35 minutes or until risen and golden.
  2. If they are frozen, place them without defrosting on one or more greased baking trays and cook until golden brown.
  3. Turn off the oven, remove the tray(s).

FINALIZATION AND ASSEMBLY:

  1. Remove from the oven and serve the tapioca cheese bread(s). right away.
