Recipe for 4 people.

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Cod cake ingredients

– 400 g desalted cod chips (or cod chips)

– 400 g of asterix potatoes

– olive oil to taste for the sautéing

– 1 large onion, chopped

– parsley to taste, chopped

– Salt to taste

– pepper to taste

– nutmeg to taste

– 2 units of eggs, beaten and added little by little (see recipe)

-oil to taste for frying

– wheat flour to taste for frying

Ingredients for serving (cod cake):

– 1 unit of lemon (juice), cut into quarters.

– piripiri to taste (pepper sauce) (or tabasco)

PREPARATION:

  1. If you have purchased the salted cod in flakes, start desalting about 6 hours before starting the preparation. Soak it in a bowl of cold water and change the water every 2 hours, keeping it covered in the refrigerator during this process, changing the water at least 3 times.
  2. Start by cooking the potatoes (see preparation).
  3. Roast garlic for aioli (optional) – see preparation.
  4. Separate the recipe ingredients and utensils.
  5. Peel and chop the onion
  6. Wash, dry and chop the parsley.
  7. Wash and cut the lemons to accompany.

PREPARATION:

COD PIE (COOK POTATOES AND COD) – (do this step before continuing the preparation)

1. This step can also be carried out the day before consumption.

2. Peel and cut the potatoes into slices and each slice in half.

3. Pierce a plastic bag and insert the potatoes.

4. Microwave for 10 minutes or long enough for them to become soft.

5. When they are cooked and still hot, drain them, squeeze them and set them aside in a bowl (for a softer consistency it is advisable to also sieve the squeezed potatoes). This step can also be performed on the processor.

6. Boil some water in a pan to cook the desalted cod.

7. Once the water boils, add the cod and boil for 5 minutes.

8. Drain and leave to cool.

9. If you use the loin, remove the skin and bones and cut the cod into small pieces, mincing it carefully, or chop it in the mixer, using the shovel.

COD PIE (PREPARATION)

1. Heat a pan, add the olive oil and sauté the onions until wilted.

2. Add the cod and brown it for a few minutes.

3. Add salt, pepper and nutmeg.

4. Turn off the heat and add the chopped parsley and chives.

5. Mix this stew with the cooked and squeezed potatoes.

6. Adjust the salt.

7. Refrigerate to finish prep day, or continue adding egg(s) if you want to fry immediately or freeze.

8. Lightly beat the eggs and add them to the rest of the preparation.

9. If freezing, shape the ravioli with two spoons, place them on a baking tray and place in the freezer.

COD PIE (Frying)

1. In a deep frying pan or frying pan, heat the oil – test with a match (if it lights it is hot enough).

2. Shape “queneles” with two spoons. If you prefer, sprinkle a little flour over the formed gnocchi before dipping them into the oil.

3. If frozen, remove them from the freezer and, while still frozen, cover them with wheat flour. Dip the gnocchi in the hot oil, turning them with a slotted spoon until they are golden.

4. Remove and let drain in a colander or on absorbent paper.

5. Repeat the process until frying is complete.

FINALIZATION AND ASSEMBLY:

1. Serve the cod pie accompanied by pepper and lemon quarters.
