Simple roasted ham

ingredients

  • 3 kg of pork shank
  • 6 cloves of garlic, peeled and chopped
  • two onions peeled and chopped
  • Juice of 4 lemons
  • Salt, ground black pepper and olive oil to taste
  • Greasing oil

Preparation method

Place the ham on an oiled baking tray and, using a knife, make diamond-shaped cuts on the surface. Reserve. Place the rest of the ingredients in the blender and blend until you get a paste. Then season the meat with the mixture, cover with aluminum foil and place in the refrigerator for 4 hours. Then cover the shank with aluminum foil and place it in a preheated oven at 200ÂșC for 1 hour. Remove the foil and bake for another 1 hour. Turn off the oven and serve immediately.

Roasted ham with pineapple salsa

ingredients

Meat

  • 4 kg of pork shank with bone and skin in pieces
  • 1 pineapple peeled and cut into pieces
  • 1/2 cup tea White wine
  • 3 onions, peeled and cut into flower shapes
  • 6 cloves of garlic, peeled and chopped
  • 3 bay leaves
  • 3 cloves
  • 1 cinnamon stick
  • 5 grains of black pepper
  • 2 tablespoons of salt
  • Olive oil to taste

Sauce

  • 1/2 onion peeled and chopped
  • 1 tablespoon butter
  • 1 tablespoon wheat flour
  • 1/2 tablespoon honey
  • Salt and ground black pepper to taste

Preparation method

Meat

Place the pineapple and white wine in a blender and blend until smooth. Reserve. Place the ham, onions, garlic, bay leaves, cloves, cinnamon and black peppercorns in a baking dish. Drizzle with the wine and pineapple mixture, cover with cling film and place in the fridge for 3 hours, turning the meat from time to time so that all sides are seasoned.

Then remove the shank from the refrigerator, place it on a cutting board, filter the marinade liquid, remove the cloves, bay leaf, cinnamon, onion and black peppercorns and reserve the liquid to prepare the sauce.

Then, with the help of a cloth, dry the ham and, with a knife, make diamond-shaped cuts on the surface. Arrange again on the baking tray, season with salt and oil, cover with aluminum foil and place in a preheated oven at 180°C for 3 hours and 30 minutes. Then remove the aluminum foil, increase the temperature to 240°C and cook for another 30 minutes. Turn off the heat and set aside.

Sauce

In a pan, add the butter and place over medium heat to heat. Add the onion and salt and sauté until golden. Add the Honey and mix well. Add the wheat flour and cook until it thickens. Add the marinade liquid and black pepper and cook for another 5 minutes. Turn off the heat and serve the sauce with the ham.

  • 1kg of ham
  • 1 lemon juice
  • 10 potatoes peeled and sliced
  • 5 cloves of garlic, peeled and crushed
  • 5 tablespoons of olive oil
  • 1 cup pork broth
  • Salt, rosemary and ground black pepper to taste

Preparation method

Place the garlic, salt, black pepper, olive oil, rosemary and pork broth in a container and mix well. Reserve. Place the ham on a baking tray and, using a knife, prick the surface of the meat. Then, spread the mixture on top with the seasonings, cover with aluminum foil and place in the refrigerator for 2 hours. Then place in a preheated oven at 240ÂșC for 1 hour. Remove the foil, place the potatoes on the baking sheet and bake for another hour. Turn off the oven and serve immediately.
