Ingredients for the baked vegetable omelette
- 8 eggs
- 3 1/2 tablespoons of wheat flour
- 1/2 grated carrot
- 1/2 grated courgette
- 1 cup broccoli (cooked and chopped)
- 1 chopped seedless tomato
- 2 tablespoons of cream cheese
- 1 teaspoon (coffee) of baking powder
- Salt to taste
- margarine to grease
Method of preparation
Put the eggs and flour in a bowl and beat with a wire whisk or fork until the mixture is smooth and airy. Add the carrot, courgettes, broccoli, tomato, curd, yeast, salt and mix. Pour into a greased medium refractory and place in a preheated medium oven for 20 minutes or until golden brown. Remove from the oven and serve immediately.
