Ingredients for the baked vegetable omelette

  • 8 eggs
  • 3 1/2 tablespoons of wheat flour
  • 1/2 grated carrot
  • 1/2 grated courgette
  • 1 cup broccoli (cooked and chopped)
  • 1 chopped seedless tomato
  • 2 tablespoons of cream cheese
  • 1 teaspoon (coffee) of baking powder
  • Salt to taste
  • margarine to grease

Method of preparation

Put the eggs and flour in a bowl and beat with a wire whisk or fork until the mixture is smooth and airy. Add the carrot, courgettes, broccoli, tomato, curd, yeast, salt and mix.
