cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml
Ingredients for the biscuit dough:
– 150 g of corn starch biscuit, processed
– 100 g unsalted butter, melted or enough to moisten it
Sour Cream Ingredients:
– 1 and 1/2 cups of fresh cream
– 1 and 1/2 tablespoons of lemon (juice)
Basic cheesecake ingredients:
– 450 g of cream cheese
– 4 tablespoons of sugar
– 3 units of eggs
– 1 teaspoon(s) of vanilla essence
– 1 1/2 cups homemade sour cream (see recipe)
– lemon to taste (zest)
Makeup Ingredients (Cheesecake)
– 1 teaspoon corn starch – see recipe
Ingredients for the red fruit garnish:
– 200 g of red fruit jelly, diluted if necessary

Ingredients TO DECORATE:
– fresh red fruits to taste
– mint to taste
PREPARATION:
- For 1 recipe consider 4 portions and use a 23 cm springform pan.
- Start by preparing the sour cream (see preparation).
- Preheat the gas oven to 180°C, if electric to 160°C.
- Then prepare the base of the cheesecake (see preparation).
- Separate other utensils and ingredients from the recipe.
- Wash and dry the lemon (optional) and remove the zest.
PREPARATION:
Sour cream (do this step during pre-preparation):
- In a bowl, mix the fresh cream and lemon juice.
- Let it rest for 30 minutes.
- Go back to pre-preparation – point 3.
Cookie dough: (do this step when pre-preparing):
- Grind the cookies using a blender or processor.
- Sift so that the biscuit flour is very fine.
- Put the remaining crumbs back into the sieve and process them again.
- Place the butter in a bowl and place it in the microwave for 30 seconds or long enough to melt it.
- Mix the melted butter with the biscuit flour: it should be very moist.
- Shape this dough into the bottom of a removable mold. Use a fork to poke holes in the dough.
- Bake in a preheated oven at 160°C for 15-20 minutes, until crisp and dry.
- Continue pre-preparation (step 5).
Cheesecake:
- In a mixer, using the paddle, beat the cream cheese to soften it.
- Gradually add the sugar and continue beating on low speed to incorporate.
- Add vanilla essence and lemon zest (optional).
- Then add the eggs, one at a time, beating after each addition, – beat just enough to combine and not curdle.
- Add the sour cream and mix well.
- If your oven has an imprecise temperature and is difficult to control, add cornstarch (optional) – see the amount in the ingredients and mix again.
Cheesecake – Assemble and Bake:
- Put a kettle on the stove with water to boil.
- When the dough is pre-cooked, remove it from the oven.
- Lower the oven temperature to 120°C if electric, to minimum if gas and cook the filling with the door ajar.
- Arrange the filling (cheesecake) on the dough, leveling the surface.
- Cover the pan with aluminum foil.
- Place the cheesecake pan on another pan.
- Place in the oven and add boiling water to the bottom pan so the cheesecake can cook in a bain-marie.
- Bake for about 1 hour or until cooked on the sides and still a little soft in the centre: this time may vary depending on the oven and the temperature selected.
- Remove from the oven, remove the film and leave to cool.
- Place in the fridge to serve chilled.
Topping and Red Fruits (preparation):
- While the cheesecake is cooling, prepare the covering with the berry jelly.
- If necessary, dissolve the gelatine in a little water to make it easier to spread on the cheesecake.
- Wash and dry the berries and mint leaves for decoration.
FINALIZATION AND ASSEMBLY:
- When it is cold, turn it out and place it on a serving plate.
- When serving, spread the jelly on the cheesecake and decorate with fresh red fruits and mint leaves.
- Serve the iced red fruit cheesecake, Keep refrigerated.
