Ingredients for Pork Belly:

– 1.5 kg pork belly, whole, with plenty of meat

Ingredients for the orange and honey marinade:

– 6 units of orange pears (juice)

– 6 tablespoons of honey

– 6 cloves of garlic, roughly chopped

– 6 cloves THE

– 3/4 teaspoon(s) of ground cinnamon THE

– 3 bay leaves

– Salt to taste

– pepper to taste THE

Ingredients TO COMPLETE:

– 1 and 1/2 tablespoons of honey

PREPARATION:

  1. When purchasing a piece of pork belly (panceta) it is important to choose one that contains a lot of meat and little fat.
  2. Separate all ingredients and utensils for the recipe.
  3. Clean the pork belly, place it on a cutting board skin side up and make shallow cuts diagonally to form diamond shapes – don’t make too deep cuts to avoid hitting the meat.
  4. Peel the garlic and chop it coarsely.
  5. Wash the oranges, cut them in half and squeeze the juice (use a citrus juicer if you prefer).

PREPARATION:

Pork Belly Marinated with Orange and Honey:

  1. In a bowl or plastic bag, prepare the marinade by mixing the orange juice, honey (marinade amount), minced garlic, cloves, cinnamon, bay leaf, salt and pepper .
  2. Dip the pork belly into the marinade and rub it well so that the seasoning is incorporated into the meat.
  3. Cover the bowl or close the bag and leave to rest for at least 4 hours in the refrigerator.

Pork Belly – Roast:

  1. Once the marinade time has elapsed, preheat the oven to 180°C.
  2. Pork belly should be roasted at a low temperature so that the meat is well cooked, without losing its juiciness.
  3. Remove the pork belly from the refrigerator.
  4. The ideal is to put it inside a closed roasting bag so that the meat steams first; another alternative is to create an envelope with aluminum foil and make sure it is tightly closed.
  5. Remove the pork belly from the marinade and place in the baking bag or on the foil, fat side up.
  6. Drizzle with the marinade.
  7. Close the bag or foil pouch and place it on a baking tray.
  8. Place in the preheated oven at 180°C and cook for approximately 45 minutes, this time may vary depending on the size of the piece to be cooked.
  9. When the meat is well cooked, remove the tray from the oven and increase the temperature to 250°C – if your oven has a rack, raise the rack so that the piece is closer.
  10. Open the bag or remove the top of the aluminum foil.
  11. Spread the final honey over the fat.
  12. Place the pan back in the oven and continue cooking until golden brown.
  13. Turn off the oven.

FINALIZATION AND ASSEMBLY:

  1. It is used for pork belly on a cutting board to cut on the table.
  2. If you prefer a smooth sauce, pass it through a sieve and put it in a gravy boat to be served separately at the table.
  3. Or slice the slice, distribute it on serving plates and season with the sauce.
