Cod rice with lentils
Time: 50 minutes
Performance: 6 servings
Difficulty: easy
Ingredients:
- 1/2 cup lentils
- 2 tablespoons of oil
- 1 onion chopped
- 2 crushed garlic cloves
- 200 g of desalted cod flakes
- 2 cups rice, washed and drained
- Salt and chopped green chilli to taste
- 4 cups (tea) of water
- 1/2 cup sliced black olives
- 2 eggs, boiled and sliced
- Olive oil for seasoning
- Straw potatoes for dusting
Preparation method:
- Place the lentils in a pan and cover them with water
- Cook over medium heat for 20 minutes or until softened
- Drain and reserve
- Meanwhile, in another pan, over medium heat, heat the oil and fry the onion and garlic for 3 minutes
- Add the cod and fry for 3 minutes
- Add the rice and brown it for 2 minutes
- Add salt and cook over low heat with the pan covered for 15 minutes or until the water dries up.
- Fluff the rice with a fork and add it to the lentils, olives and green chillies.
- Transfer to a plate
- Decorate with eggs, drizzle with olive oil, sprinkle with potato straws and serve immediately.
