Ingredients Baked apples
– 6 medium or large Fuji apples, whole, cored (or other core of your choice)
– 3/4 unit of lemon (juice)
– 120g unsalted butter, melted.
– 18 tablespoon(s) of sugar
– ground cinnamon to taste
Ingredients CRUMBLE (STREUSEL) – CRUNKY SWEET FAROFA
– 165 g of cold unsalted butter, plus a little more for greasing.
– 1 1/2 cups demerara sugar (or sugar)
– 3 cups of wheat flour
– salt to taste (pinch).
– nutmeg to taste, grated. (optional)
– 3 teaspoons of chemical yeast
– 3 teaspoon(s) of vanilla essence (or almond essence)
– 3 units of eggs, just the yolk(s), to finish.
Ingredients TO ACCOMPANY)
– ice cream to taste (optional)
– natural yogurt to taste
– fresh cream to taste, whipped with sugar until whipped cream is obtained
PREPARATION:
- Separate the recipe ingredients and utensils.
- Wash and dry the lemon and squeeze the juice.
- Place the butter in a glass bowl and place it in the microwave to melt.
- To the melted butter, add the sugar and cinnamon and mix.
- Line a baking tray with aluminum foil or baking paper.
- Grate the ginger to use in the crumble.
- Preheat the oven to 180°C.
PREPARATION:
Baked apples (start with apples, because they take longer):
- Wash and dry the apples.
- Using a corer or small knife, remove the core and seeds, being careful not to pierce the apples.
- Pour lemon juice into the cavities and rub the entire inside of the apple – this prevents the apple from darkening and adds flavor to the fruit.
- Fill the apples with the butter, sugar and cinnamon mixture.
- Place on the lined baking tray and bake in a preheated oven at 180°C.
- Cook until the apples are soft and dark, for 1 hour, basting them with stock every 15 minutes – cooking time depends on the size of the apples and the temperature, adjust if necessary.
Ginger Crumble (do this step while roasting the apples):
- This recipe has a good yield: the recipe for 2 people can contain up to 6 pieces of apples.
- Cut the cold butter into cubes.
- In a bowl, place the other farofa ingredients (demerara sugar, flour, chemical yeast, vanilla or almond essence, salt, nutmeg (optional), ginger) except the egg yolks.
- Mix well with your hands, breaking up the butter so that it blends into the whole mixture.
- Add the egg yolks, continue mixing with your fingertips until a moist and crumbly crumb forms.
- Butter a mold and flour it, roll it out well and cook it in a preheated oven.
Ginger crumble, sweet farofa, bake (do this step when there are 30 minutes left until the apples are cooked)
- Cook the crumble at 180°C for 20 minutes or until the farofa is golden and crispy (the time may vary depending on your oven, the temperature and the quantity you are preparing).
- Leave to cool to room temperature.
- Break it into smaller pieces, making a crumble – the size of the pieces can vary depending on your preparation – if you want it more delicate, chop it into smaller pieces, using a knife.
- If you have any crumble leftover, store it in an airtight container, tightly closed to maintain its crunchiness.
Cooked apples:
- Once the apples have reached the desired doneness, remove them from the oven.

- Serve the apples, preferably hot, accompanied by the ginger crumble.
- Optionally, serve with ice cream, natural yogurt or fresh cream whipped into the whipped cream
