Ingredients:
- 1 tablespoon of oil
- 2 onions, thinly sliced
- 1 clove of minced garlic
- 2 cups seedless tomatoes (diced)
- 1 cup grated carrot
- 1 cup frozen peas
- 6 cups cooked white rice
- 2 cups cream cheese (400 g)
- 1 cube of vegetable broth
- 2 tablespoons butter
- 1 cup (tea) boiling water
- 2 cups grated mozzarella
Preparation method:
- In a pan, heat the oil and onion over medium heat and sauté until softened.
- Add garlic, tomato, carrot and peas
- Brown for another 5 minutes
- Turn off the heat and then mix in the rice and cream cheese.
- Transfer the rice to a medium baking dish and set aside
- Meanwhile, in a pan, dissolve the vegetable broth and butter in the boiling water.
- Using a ladle, pour this mixture over the rice.
- Sprinkle with mozzarella and place in a preheated medium oven for 20 minutes to brown.
